El Mirador Pink Bourbon

We’re very excited to be releasing one of our favorite varieties from one of our favorite producers, a Pink Bourbon from Don Victor. The name Don Victor is quickly gaining notoriety amongst the staff here at the roastery. His farm Finca El Mirador has become a testing ground of sorts for several of our favorite varieties; such as wush wush, maragogype, java, gesha. Many of these coffees we’ve already shared in previous harvests. Each of them have been remarkably expressive, and have demonstrated intensified versions of the respective variety characteristics. 

Don Victor takes a bespoke approach to processing for each variety. For the Pink Bourbon, the coffee underwent an initial 25 hour fermentation in cherry, before being depulped. It then underwent a subsequent 24 hour fermentation in the mucilage, before being washed and sun dried. It’s a creative and unique approach that pulls aspects from each of the customary washed, honey, natural approaches and rolls them all into one. The processing has a big impact on the cup, where we find intensity of acidity and fruit sweetness front and center. It’s a bright, expressive cup, without the winey ferment flavors often found in heavy duty processing approaches. It’s a fine line that the team at El Mirador navigates with mastery and precision. This is a coffee for folks who love deep, fresh fruit driven coffees with high flavor clarity.
